SHAKER OYSTER BROIL

Herb Crumb Topping
  ½ cup cracker meal
  ½ cup grated cheese (asiago, parmesan, pechorino, rigiono)
  1 t melted butter
  salt & pepper to taste
  3 t fine herbs (assortment of tarragon, parsley, rosemary, chive, cilantro, sage, marjoram)
  * blend ingredients, adding butter last to bind crumb topping.

Oysters
  1 dozen oysters, extra large
  * open leave on the half shell, release all muscles
  2 oz heavy cream
  2 oz Chardonnay
  1 t garlic, diced fine
  1 t shallots, diced fine
  1 t olive oil

  1. Place crumb topping to cover oysters.
  2. In a large skillet place oysters, heat pan on medium heat, add oil to heat.
  3. When oil is hot, add garlic and shallots, deglaze pan with cream and wine, and bring to boil.
  4. Place in broiler, uncovered and broil over medium heat, until golden brown.



ARLINGTON HOUSE STRING VEG

The Arlington House String Veg is a light accompaniment, served throughout the year. However the ingredients change with the weather, the style remains the same.

  1 lg zucchini
  1 lg squash
  1 lg carrot
  1 sm head of red cabbage
  1 lg red pepper
  ½ cup balsamic vinegar
  ¼ cup extra virgin olive oil
  basil
  garlic
  shallots
  salt & pepper to taste
  * blend all ingredients, serve immediately.

Do-Si-Do CHICKEN FINGERS with SESAME PEANUT SAUCE
  6 oz. Chicken Breast sliced find
  Flour
  3 eggs, whisked for egg wash
  1 box Do-Si-Do cookes, creme center scraped off and set aside, cookie halves finely ground.
  Dredge chicken in flour, eggwash and cookie crumbs. Pan fry 2 minutes per side over medium heat until crisp and cooked through.
Sesame Peanut Sauce
  Using cookie creme set aside, add 1 tablespoon sesame oil and 2 tablespoons soy sauce. Blen until smooth.

LEMON COOKIE CRUMB CRUSTED OYSTERS
  12 Fresh Oysters
  1 box Lemon Cooler Cookies ground fine and blended with 2 tablespoons of melted butter and 1 tablespoon diced chive.
  Place oysters in roasting pan and top with Lemon Cooler Crumb Mixture. Add 2 tablespoons white wine and 1 tablespoon butter. Broil for 3 minutes.
